Ingredients:
4 Tbls. margarine
1/2 pound mushrooms, fresh
1/4 C. onions, sliced
salt to taste
freshly ground pepper
1/2 C. Italian parsley, chopped
2 Tbls. lemon juice, or as desired
Instructions:
Slice mushrooms, removing and discarding stems if shitakes. Heat margarine in medium to large frying pan. Add mushrooms to margarine. Sauté over medium heat for 3 to 4 minutes, or until they begin to soften. Add onions, cooking until they become limp and begin to clear, about another 3 minutes. Add 2 Tbls. lemon juice, salt, and bit of ground pepper. Taste for seasonings. Add more additional lemon juice, if desired. Top with parsley. Serve immediately, or freeze for later use.
