  SWEET POTATOES AND APPLES

Ingredients:
12 oz. cooked sweet potatoes, peeled, sliced lengthwise into thin slices
2 small sweet apples, peeled, halved, cut into thin slices
1/4 C. frozen orange juice concentrate, thawed
1/4 C. water
6 tsp. sugar
1/8 tsp. ground ginger
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 Tbls. margarine plus 1 tsp. margarine
Instructions:
Preheat oven to 350 degrees F. Arrange alternate slices of sweet potato and apple in a baking dish that has been sprayed with a nonstick cooking spray. Combine orange juice, water, sugar, and spices. Pour mixture evenly over potatoes and apples. Dot with margarine. Bake, uncovered, 1 hour.
