  CRANBERRY STUFFED ACORN SQUASH

Ingredients:
2 medium acorn squash
1 apple, chopped
1/2 C. cranberries, fresh or frozen, chopped
1 orange, peeled and chopped
1/2 tsp. cinnamon
2 tsp. honey, or Equal sweetener
Instructions:
Cut the squash in half and remove the seeds. Combine remaining ingredients, except honey or sweetener. Fill squash with the mixture. Drizzle honey or sweetener over squash. Place in a baking pan. Cover with aluminum foil or a lid. Bake for 25 minutes at 400 degrees F. Remove foil and continue baking until squash is tender, about 20 minutes.
