  Green Olive-Cucumber Salad

Ingredients:
1 package Lime-flavored gelatin, 3oz.
1 cup Water, hot
1/2 cup Water, cold
1 tsp Lemon juice
1 tsp Lemon rind, grated
1 tsp Onion, grated
1/2 tsp Salt
1 medium Cucumber, peeled and chopped
1/3 cup Green olives, onion-stuffed
Instructions:
Dissolve gelatin in hot water. Add cold water, lemon juice, lemon
rind, onion, and salt. Chill until slighlty thickened. Fold in
cucumber and olives. Pour into a 1-quart mold and chill until firm.
