Ingredients:
1 lb. dry navy beans
1/2 tsp. soda
1 tsp. salt
1 medium onion
3/4 tsp. dry mustard
1 C. butter
3 C. light brown sugar (more or less to taste)
1/2 C. salt pork or 6-7 slices bacon
pepper to taste
Instructions:
Soak beans overnight in cold water. Heat slowly (in same water) to boiling point, add 1/2 tsp. soda and simmer 15 minutes. Drain and rinse. Add fresh hot water, salt, and whole onion (peeled) and simmer until medium tender, 1 1/2 -2 hours. Drain and save water. Put beans in a baking dish with cover. Melt butter and allow it to become golden brown in color. Combine with sugar, dry mustard, pepper, salt pork or bacon and liquid, pour over beans and bake at 325º for 8 hours. Add water occasionally. Uncover last 1/2-1 hour for browning.
