  ISLAND SWEET POTATO PUDDING

Ingredients:
12 oz. cooked sweet potatoes, peeled and cut in chunks
1 medium ripe banana, mashed
3 tsp. brown sugar, firmly packed
2 Tbls. reduced calorie margarine, plus 2 tsp. reduced calorie margarine
1/4 tsp. ground nutmeg
1 tsp. rum extract
1 egg white
Instructions:
Preheat oven to 350 degrees F. In a large bowl, beat all ingredients except egg white until smooth. Add a small amount of water, if necessary, to get a smooth consistency. Beat egg white until stiff. Fold gently into sweet potato mixture. Spoon into a casserole that has been sprayed with a nonstick cooking spray. Bake, uncovered, 45 to 50 minutes, until lightly browned.
