Ingredients:
2 C. fresh corn, cut (4 ears), or 10 oz. frozen corn, whole kernel
1 Tbls. cornstarch
1/2 C. vinegar
1/3 C. cold water
1/4 C. chopped onion
1/4 C. chopped celery
1/4 C. sweet pepper, green and red, chopped
2 Tbls. pimiento, chopped
1 tsp. turmeric, ground
1/2 tsp. salt
1/2 tsp. dry mustard
1-3/4 tsp. Equal Measure, or 6 packets Equal sweetener
Instructions:
Cook corn in boiling water 5 to 7 minutes, or until crisp and tender; drain and set aside. In a saucepan, combine cornstarch, vinegar and water. Stir in the corn, onion, celery, chopped pepper, pimiento, turmeric, salt, and mustard. Cook, stirring, until thickened and bubbly. Cook, stirring, for 2 minutes more. Remove from heat. Stir in Equal Measure. Cool. Cover and store in the refrigerator for up to 4 weeks.
