  Eggplant & Tomatoes Over Rice Noodles

Ingredients:
1 Eggplant (cubed to
1/4*to*1/2 inch cubes)
1 can Tomatoes (either use whole
And chop, of buy chopped)
1/2 package Rice noodles (glass noodles)
Precooked
each Salt (optional)
Instructions:
In microwave container, layer eggplant, salt, tomatoes, and rice
noodles in that order. Microwave high until eggplant is to taste - it
takes me 10 minutes on high. Mix everything and enjoy.

Variation: Use sticky rice instead of the noodles.
