  Spinach Fusilli Bake

Ingredients:
1 lb. fresh spinach, steamed
2 C bechamel sauce (recipe below)-
4 Tbsp. butter/margarine
2 C skim milk
3 Tbsp. flour

salt
pepper
10 oz. cooked fusilli noodles
2 Tbsp. olive oil
2 large cloves of garlic, minced
5 large tomatoes
1/2 C shredded mozzarella cheese

Instructions:
Bechamel Sauce:
Melt butter, gradually stir in flour using a wooden spoon. Add warm milk slowly, stirring constantly until sauce thickens. Simmer over low heat, 5-6 minutes.

Fusilli Bake
When spinach is cool enough to handle, squeeze dry. Mix into bechamel and add salt and pepper to taste. Cover bottom of baking dish with mixture. Toss well-drained pasta with olive oil and garlic and spread over spinach. Arrange tomato slices over top, slightly overlapping. Sprinkle cheese on top. Bake at 350 degrees for 40-45 minutes until nicely browned.
