  SPINACH AND ARTICHOKES

Ingredients:
2 lb. spinach
1 package frozen artichoke hearts
4 slices bacon
1/2 C. fine chopped onion
1 Tbsp. flour
1 clove garlic, finely minced
3 scallions, including green part, trimmed and chopped
1/2 C. heavy cream
salt and black pepper to taste
cayenne pepper to taste
1/4 C. tasted soft bread crumbs
butter
Instructions:
Trim off any tough stems on the spinach and wash the leaves in several changes of cold water. Shake to remove excess moisture and put the spinach in a kettle. No additional water needed. Cover the kettle and bring to a boil. Stir the leaves around when they wilt and continue cooking briefly until just tender. Set aside. Cook the artichoke hearts according to package directions. Set aside. Meanwhile, in a large saucepan cook the bacon until crisp. Remove the bacon, crumble it and reserve. Preheat oven to 400º. Pour off all but 1 Tbsp. of the fat from the saucepan and add the onion and flour to the saucepan. Cook, stirring, but do not brown. Add the garlic and scallions and stir in the cream. When the mixture is thickened and smooth, drain the spinach well in a colander. Drain the artichokes. Add both vegetables and reserved bacon to the sauce and season with salt, pepper and a touch of cayenne. Pour into a buttered baking dish. Sprinkle with bread crumbs, dot with butter and bake until thoroughly hot and nicely browned, about 15 minutes. Serves 6 to 8.
