Ingredients:
1 lb Alligator meat -- chop
1 Egg
1 tbsp Onion -- chop fine
2 tbsp Celery -- chop fine
1 tbsp Parsley -- chop fine
2 tbsp Shallots -- chop fine
2 tsp Lemon pepper
1/2 tsp Salt
1/4 cup Bread crumbs
Flour to dredge
1 cup Cooking oil
Instructions:
Mix all ingredients, form into 1" balls. Allow to set for 1 hour.
Dredge with flour and fry until brown. Serve hot. Source: Louisiana
