Ingredients:
1/3 cup Vegetable oil
1/4 cup Fresh lime juice
1/2 tsp Salt
1/4 tsp Pepper
3 cup Cooked long-grain white rice
Room temp
3/4 cup Each green/red bell peppers
Chopped
1/3 cup Green onions -- thinly
Sliced
1/4 cup Fresh cilantro -- minced
Instructions:
1. Whisk the oil, lime juice, salt and pepper in a bowl until well
blended. 2. Add remaining ingredients. Toss to coat with dressing.

Makes 5 cups or 8 servings.
