Ingredients:
1 C. peeled small whole onions
1 C. fresh baby carrots
12 small new potatoes halved, about 4 C.
2 pounds boneless beef chuck steak cut 1 1/2 inch pieces
1 can diced tomatoes-14 1/2 oz. un-drained
1/2 C. apple juice
4 tsp. curry powder
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
Instructions:
In 3 1/2 to 4 quart crock pot, layer onions, carrots and potatoes. Place beef over vegetables. In medium bowl, combine all remaining ingredients, mix well. Pour over beef. Cover, cook on low setting for 8 to 10 hours.
