Ingredients:
3 Beets, cooked and peeled
2 Tart apples, peeled & cored
1/2 cup Feta or goat cheese
1/2 cup Walnuts
1/3 cup Thinly sliced scallions
1/3 cup Basic vinaigrette dressing
Instructions:
Cube the beets and the apples and mix together in a bowl wiht the
cheese, the walnuts and the scallions. Drizzle dressing over and stir
to coat. Serve on a bed of butterhead lettuce.
