Ingredients:
3 sm. zucchini, washed and sliced in 1/4" coins
1 sm. peeled & cubed eggplant, 1/2" cubes
1 sm. onion, chopped medium fine
8 oz. pkg. sliced mushrooms
1 Tbsp. olive oil
1 lb. or small size jar spaghetti sauce
parmesan cheese
1/2 tsp. garlic powder or fresh minced garlic
salt and pepper to taste
Instructions:
Combine onion, zucchini, eggplant and olive oil in a large pot. Over low heat, simmer, tightly covered for 30 minutes. Add spices to taste. Combine with mushrooms and spaghetti sauce and heat over low heat until bubbly. Serve with parmesan cheese.
