Ingredients:
7 medium potatoes, peeled and halved
16 oz. box plain lasagna noodles
(do not use the no cooking required variety0
1 1/2 C. grated sharp cheddar cheese
salt and pepper to taste
3 Tbsp. butter or margarine
1/3 C. warm milk
Instructions:
Boil the potatoes until tender. Meanwhile, prepare noodles as per package instructions. Drain the noodles and rinse in cold water. Drain the potatoes and mash with the butter, milk and 1 C. of cheese. Season with salt and pepper to taste. Layer the noodles and potato mixture in a greased lasagna pan, beginning and ending with the potatoes. Top with remaining cheese. Bake 350º for 40 minutes and serve with sour cream. Serves 4 - 6 as a main course.
