Ingredients:
1 medium onion
1 Tbls. fresh coriander leaf, chopped
1/4 tsp. hot chili peppers, green, minced
1/2 tsp. coriander seed, ground
1 large garlic clove, halved
1/4 tsp. brown sugar
1-1/2 tsp. soy sauce, low sodium
1-1/2 tsp. lemon juice
2 tsp. oriental sesame paste
1/2 lb. chicken breast halves without skin
Instructions:
Turn oven to broil. Chop onion in food processor using steel blade. Chop fresh coriander; mince chili and add with ground coriander, garlic, sugar, soy sauce, lemon juice and sesame paste. Process to a puree. Cut boned and skinned chicken breasts into quarters. Arrange on broiler pan and spread with the puree. Broil 6 inches from heat for about 12- 15 minutes. Chop additional fresh coriander and use for a garnish if you wish.
