Ingredients:
2 lb. ground beef, or lamb, or both
4 green onions, finely chopped
1 clove garlic, minced
1 tsp. oregano
1/4 tsp. cumin
1/4 tsp. parsley
1 tsp. salt
1/4 tsp. pepper, freshly ground
8 large pita breads
Tzatziki Sauce:
1 C. yogurt
1 Tbls. mayonnaise
juice of 1 lemon,
2 scallions, including green tops, finely chopped
cucumber, minced
5 cloves garlic, minced
Instructions:
Mix all ingredients, except pita and sauce ingredients, mixing well. Knead until mixture is stiff. On a skewer, pack meat mixture about 5 inches long and not more than 2 inches in diameter. Put as many "fingers" as possible on a skewer, leaving a 1-inch space in between. Cook over hot coals 10 to 15 minutes, turning frequently. Sauce: Combine all ingredients and mix well. When gyro is done, take pita and slide gyro into center. Drizzle with sauce. Fold over to eat.
