  MW HotDog Onion Sauce

Ingredients:
Regular Size Batch (servers 8 to 10)
2 tablespoons of canola oil
2 large vidalia onions, thinly sliced
1 1/2 teaspoons of ancho chile powder (regular chili powder OK)
1/2 teaspoon of ground cinnamon
1/2 teaspoon of smoked/regular paprika
1/2 cup of ketchup
1/4 teaspoon of hot sauce
1/2 teaspoon of spicy brown mustard
3/4 teaspoon of brown sugar
1/2 teaspoon of kosher salt
1/4 teaspoon of freshly ground black pepper

Large Batch Onion Sauce...
1/4 cup of canola oil
8 large vidalia onions, thinly sliced
2 tablespoons of ancho chile powder (regular chili powder OK)
2 teaspoons of ground cinnamon
2 teaspoons of smoked/regular paprika
2 cups of ketchup
1 teaspoon of hot sauce
2 teaspoons of spicy brown mustard
1 tablespoon of brown sugar
1 teaspoon of kosher salt
1/2 teaspoon of freshly ground black pepper
Instructions:
Over medium heat, heat the oil in a medium saucepan or heavy bottomed dutch oven. Add the thinly sliced onions to the oil and cook for 5 minutes or so, until the onions are soft.
Sprinkle in the ancho chile powder, cinnamon and smoked paprika.
Saute for another minute or so.
Add 1 cup of water, ketchup, hot sauce, mustard, brown sugar, salt and black pepper.
Cook until the sauce has thickened and the onions are soft - about 25 - 30 minutes.
If you need to add more water, feel free.

**Thicken with corn starch if desired...

Let cool to just warm before serving.

Top your hot dog with some of the spicy brown mustard, a bit of the Hot Dog Onion Sauce and enjoy!
