Ingredients:
2 C. grated carrots
2 C. crumbled soda crackers
1/2 C. grated Cheddar cheese
1 large onion, finely grated
1/2 C. chopped nuts
1/2 tsp. salt
1/8 tsp. black pepper
1/2 tsp. sage
3 eggs, lightly beaten
1 C. light cream
Instructions:
Preheat the oven to 350°. Combine the carrots, crackers, cheese, onion, nuts, salt, pepper, and sage. Mix together the eggs and cream and stir into carrot mixture. Turn into greased loaf pan and bake for 1 1/2 hours. Serves 4.
