Ingredients:
1/2 to 1 lb. ground beef
1 large or 2 med. onions, diced
3 diced tomatoes or
1 10-12 oz. can chopped peeled tomatoes
8 to 12 oz. whole-kernel corn
10 to 12 oz. tomato sauce
1 C. grated jack cheese
1 C. grated cheddar cheese
sliced olives
sour cream
tortilla chips (unsalted are best)
Instructions:
Sauté ground beef in skillet, draining off grease. Add onions; cook until translucent. Add tomatoes, corn and tomato sauce; cook just until simmering. Pour into casserole dish; top with cheeses. Bake at 350° for 15 minutes or until cheese melts. Line plates with bed of tortilla chips. Scoop casserole on top; garnish with sour cream and sliced olives. Serves 4.
