Ingredients:
1 tsp. ground cumin
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
4 chicken breast halves without skin and bone (pounded to 1/2-inch thick)
nonstick cooking spray
4 plum tomatoes, finely diced
1/4 C. scallions, thinly sliced
1 Tbls. fresh lime juice
1 tsp. garlic, minced
1 tsp. jalapeno pepper, minced
Instructions:
In cup, mix spices; rub over both sides of chicken pieces. Grease nonstick skillet with cooking spray; cook chicken 4 minutes per side or just until cooked. Place on platter. Heat remaining ingredients until hot; pour over chicken.
