Ingredients:
3/4 C. vegetable juice
1-1/2 tsp. flour
2 tsp. paprika
1/2 tsp. seasoned salt
1 tsp. olive oil
1/4 C. sliced green onions (including tops)
1 garlic clove; minced
1/2 lb. chicken breasts, cut in 2-inch strips
2 Tbls. dairy sour cream
1 C. hot cooked rice
snipped fresh parsley (garnish)
Instructions:
Combine vegetable juice, flour, paprika, and salt in small bowl; set aside. Heat oil in medium skillet over medium heat. Add onions and garlic; cook for 1 minute. Add chicken strips and cook until chicken is lightly browned. Add vegetable juice mixture. Cook until mixture boils, stirring often. Reduce heat to low; cover and simmer for 15 minutes. Remove from heat and stir in sour cream. Serve over rice. Sprinkle with parsley.
