Ingredients:
1 cup White rice
2 tbsp Olive oil
3 tbsp Fresh basil, parsley, or mix of the two or 1T dried herbs
1 1/2 cup Mozzarella, grated
2 tbsp Parmesan, grated
Instructions:
Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir
mozzarella into hot rice--it must melt. Sprinkle parmesan over top and
serve immediately.
