1/3 cup All-purpose flour
1 tsp Baking powder
1 tsp Salt
1/2 tsp Pepper
1/4 tsp Nutmeg
2 Eggs
1 cup Milk
1 tbsp Butter, melted
2 cup Cheddar cheese, shredded
2/3 lb Spinach, frozen, chopped, thawed (300 g)
1/4 cup Sweet red pepper, fine chop
1 Green onion, chopped
Instructions:
In large bowl, stir together flour, baking powder, salt, pepper and
nutmeg.

In separate bowl, whisk eggs; whisk in milk and butter. Stir in
cheese, spinach, red pepper and onion. Pour over flour mixture; stir
just until combined. Pour into greased 11x7-inch baking dish. Bake in
350F 180C oven for about 30 minutes or until set. Let cook for 10
minutes; slice into squares.

For easy family supper, cut them into larger squares and serve with
vegetables and a dip, and thick slices of Italian bread.
