Ingredients:
1 1/2 lbs lean ground beef (chuck, round work well)
1/4 c chopped red bell pepper (optional)
1/2 c chopped onion (frozen or fresh)
1 tbsp garlic
1 12 oz can tomato soup
1 egg
1 individual package of crackers

Topping
1/2 c ketchup
1/4 c mustard
1 tbsp packed brown sugar
Instructions:
Preheat oven to 375 degrees.
In a large bowl combine ground beef, red bell pepper, onion, garlic, tomato soup, egg, and package of crackers.
Mix ingredients until just combined.
In a 9' x 13' pan lined with aluminum foil form meat mixture into a loaf.
Coat loaf with half of topping mixture
Recoat loaf half way through baking process
Cook for approximately 1 hour.
Let cool for 5 minutes prior to serving.
