  SPICY BREADED CHICKEN

Ingredients:
1/2 C. dry breadcrumbs
1 Tbls. nonfat dry milk powder
1-1/2 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. dry mustard
1/4 C. skim milk
1 broiler fryer chicken (3 pounds), skinned, cut up
Instructions:
In a plastic bag, mix breadcrumbs, milk powder, chili powder, garlic powder and dry mustard; set aside. Pour milk into a shallow pan. Dip chicken pieces in milk, then place in bag and shake to coat. Place chicken, bone side down, in a 13 by 9 by 2 inch baking pan coated with nonstick cooking spray. Bake, uncovered, at 375 degrees F. for 50 for 55 minutes, or until juices run clear.
