Ingredients:
2 cup Diced tomatoes - (about 3 large)
1/2 cup Fresh corn kernels
1/2 cup Diced English hothouse cucumber or pickling cucumber
1/2 cup Sliced green onions
1/4 cup Diced green bell pepper
1/4 cup Plus 2 tbsp olive oil
1/4 cup Chopped fresh cilantro
3 tbsp Fresh lime juice
2 large Garlic cloves, minced
1 Jalapeno chile, minced
1/2 tsp Ground cumin
Instructions:
Combine all ingredients in large bowl. Season to taste with salt and
pepper.
