Ingredients:
2 tbsp Olive oil
2 tbsp Cider vinegar
2 tsp Basil, chopped -=OR=-
1 tsp Dried basil
1/2 tsp Salt
1/4 tsp Pepper
3 cup Cooked rice, cooled
2 medium Tomatoes, chopped
1 medium Cucumber, seeded & chopped
1 small Red onion, chopped
Instructions:
In a small bowl, whisk together oil, vinegar, basil, salt and pepper.
Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
