  ORANGE-SPICED SWEET POTATOES

Ingredients:
56 oz. canned cut sweet potatoes,
drained
1/4 C. sugar
1/4-1/3 C. orange juice
3 tsp. margarine melted
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. ginger
1/8 tsp. pepper
1 Tbsp. margarine, melted
1 Tbsp. grated orange rind
orange slices for garnish
Instructions:
Mash sweet potatoes in a large bowl. Stir in sugar and next 6 ingredients. Spoon into a lightly greased 7x11" baking dish. Drizzle with 1 Tbsp. melted butter and sprinkle with orange rind. Bake at 350° for 25-30 minutes. Garnish, if desired.
