Ingredients:
8 firm, ripe tomatoes
1/4 C. chopped parsley
1 clove garlic, crushed
1 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
1/4 C. olive oil
2 Tbsp. vinegar
2 tsp. prepared mustard
Instructions:
Slice tomatoes into thick, even slices; set aside. combine remaining ingredients in a small jar; shake well. Layer tomatoes in a shallow dish, covering each layer with dressing. Cover lightly. Let stand at room temperature for at least 20 minutes. Chill and serve. Serves 8 to 10.
