Ingredients:
1 lb. ground chicken
1 C. crushed saltine crackers (about 24)
1/2 C. minced fresh onion
1/4 C. water
2 Tbls. minced green bell pepper
2 Tbls. ketchup
1 Tbls. Dijon mustard
1 tsp. prepared horseradish
1/2 tsp. paprika
1/4 tsp. pepper
vegetable cooking spray
Instructions:
Combine all the ingredients except cooking spray in a bowl, and stir until well-blended. Pack mixture into an 8x4-inch loaf pan coated with cooking spray. Bake at 350 for 45 minutes or until done. Cut meat loaf into slices.
