Ingredients:
6 chicken thighs
2 Tbls. oil
1 medium onion, chopped
2 garlic cloves, crushed
1/4 tsp. dried Thai chili, crushed
1 tsp. cumin, ground
1 tsp. coriander, ground
1/2 tsp. turmeric
2 Tbls. soy sauce
lime wedges
Instructions:
Brown chicken in oil. Add the remaining ingredients in the order listed. Reduce the heat and simmer, covered, for 15 to 20 minutes or until the chicken is tender. Serve with lime wedges.
